I know scaling uses an ultrasonic scaler

They are simply called dental (or endodontric) polishers but there are several different types depending on what surface is to be polished(ie enamel tooth, or fillings, metal or porcelain etc.) one of the commonly used one is called a Porte Polisher see this link for different types
